I always keep a box or two of Jiffy banana muffin mix in the pantry for those times when our bananas have passed their prime. This week I decided to make it from scratch and see if I could do better than last week's bread disaster. Since I'm trying to watch my diet a bit, I looked through a bunch of recipes, then altered them to fit my needs. This bread turned out great. It's not a dessert-y, sticky-sweet, feel-a-little-guilty-eating-it banana bread. It's more of a whole wheat bread that tastes slightly like bananas. I've had a slice each morning, warmed slightly, with butter on top and a cup of coffee. Mmmmmm....like a little slice of heaven!
Whole Wheat Banana Bread
1/3 cup applesauce (I didn't realize I was out, so I used apple butter instead! Most recipes used 1/3 c of oil though.)
1/2 cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas
1 3/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup orange juice
2 tablespoons water

Mix wet ingredients together, add baking soda and mix well, then stir in flour. Pour into greased bread pan. Bake at 325 for about 45 minutes.
